rock.

Production: 300 bottles
Vinification: Eszencia is the extremely rare and precious product
of the best botrytised grapes. Low in alcohol, only a few degrees (4-6°),
its sugar content is extremely high, between 450 and 600 grams of residual
sugar per litter. Its very ancient discovery sprang from the manner in
which the Aszús grapes are handled at harvest time, which takes place
rather late, from October to the end of November, on the well-exposed
slopes of Mount Tokaj. Once the grapes, essentially from the Furmint variety,
have attained their optimal concentration, they are plucked from the bunch,
one by one, and placed in a wooden basket without being pressed. The extreme
maturity of the grapes allows the first juice to drip, one drop at a time,
due only to gravity and without being pressed. The volumes produced are
thus also more than confidential ! After a light and natural fermentation,
the future Eszencia ages in a wood cask for two years without any further
intervention. During this period, its powerful aromatic structure develops
and yields a unique, indescribable and highly sought-after bouquet.
Style: Unique in the world because of its rarity and method of
production, Eszencia has to be discovered rather than consumed. It is
to be desired, approached and courted in secret. A few sips, served at
12° C (50-54° F), accompanied by some hors-d'uvre, will
let you experience the magic of this aszu natural essence. Popular legends
grant it therapeutic and revitalising virtues. A generous elixir that
fills and renews the soul, Eszencia opens up eternity. One has to be all
ears, all eyes, silently savouring it in order to hear, understand, and
be seduced by the history of a people still longing for its past grandeur.
