Appellation: Tokaj Late Harvest (25-40 g/l res. sugar)

Vineyard: 45 hectares of Domaine Imperial Hétszölö (south-south east exposure) whose soil composition is loess with clay and a sub-soil of volcanic rock.

Varietals: 95% Harslevelü, 5% Furmint

Production: 36 000 bottles (depending on the vintage)

History: Grown since the 18th century, its name means "linden-leaf" in Hungarian

Vinification: Harvested exclusively by.hand. At the reception of the harvest, the grapes are entirely destemmed for the "maceration pelliculaire" (to maximise the aromatic structure). The fermentation in stainless steel vats, and at carefully controlled temperatures (14 18°C), lasts about 10 days. The wines are filtered only very lightly to maintain a maximum amount of aromas and structure. The new vinification center (built in 1992) is situated next to the vineyards itself.

Style: Beautiful brillant colour with highlights of green that complements the delicate pale-yellow colour. The bouquet is well defined and fruity (apricot, figs etc.) with aromas that are surprisingly powerful and distinctive. To the palate, this wine is extremely fruity with very clean-cut aromatic flavours. The soft, crisp aftertaste follows through beautifully with the relative sweetness giving this wine a highly individual and classy style. Harslevelü makes a delicious aperitif and is also a fine accompaniment to poultry dishes, white meats and game. It also goes wonderfully with fruit tarts and other desserts...
