Yes, the Aszu wines age in oak barrels
for a minimum legal period of 2 years (4 years for the Aszu Escenzia).
The age of the barrels used are between 1 and 4 years old.
The barrels lay in narrow and winding underground cellars dug in the volcanic rock. There reigns a constant temperature of 10°C and the air is purified and naturally ventilated by air-sockets called "holes of the soul". Moreover, the cladosporium cellore (or cellar mold) lines the walls and has a filtering effect. These cellars assure ideal conditions for the aging of the wines. |
