What does "Aszu"
mean ?

The term "Aszu" literally
means "dried berries". Under the hot autumn sun, the raisins
virtually "bake" (become shrivelled) and the "botrytis
cinerea" (noble rot) begins its process of sugar concentration and
the reduction of the berry's natural level of acidity. These berries,
having lost their water content, are thus called "aszu", meaning
"dried".
