| VINIFICATION |
In the vineyards: cover planting, bud pruning and green harvesting adapted to the sturdiness of each plant…. During the grape harvesting: research into the optimal maturity on each terroir and for each vine variety: the two hectares are harvested four times and the grapes are transported to the tanks by hand, without the use of a pump… For the vinification: cold maceration, cap immersion… During the maturing: the choice of wood used for le Clos la Madeleine is made depending on the structure and the typicality of the cru – with the finest grains and the most closely adapted woods (elegance, breed and finesse). |
