VINIFICATION Production techniques for this wine follow the latest recommendations of the Bordeaux Oenology School: particularly, meticulous harvest at optimum ripeness (the grape is transported in crates), vinification and élevage in new barriques on the lees with stirring. 
   
STYLE Whilst small in production, it is worth seeking this wine for it's delightful fresh and aromatic style. Drink within 5-7 years of harvest date. 
   
MARKET NOTE Along with Pavillon Blanc du Ch. Margaux, "Caillou Blanc" is one of the oldest dry white wines to be produced in the Médoc.
