| VINIFICATION |
Work on the vineyard during the year including de-leafing (or “effeuillage”) and green harvesting. The entire production is harvested by hand. The vinification is traditional in stainless steel temperature-control vats. Long maceration. Malolactic fermentation in barrels. Ageing in barrels during 12-14 months (1 year barrels previously for the Grand Vin).
It is important to note that there is even a 3rd selection (sold as bulk wine with no reference to Giscours) which proves that La Sirène is NOT the waste-paper label for the estate. Moreover, the current owner (The Albada family since 1995) has made significant steps and investments to continue to push up the quality of Giscours. |
