Mechanical harvesting. The cuvaison lasts 20 to 22 days at a 28-degree-temperature. Then, the malolactic fermentation and the ageing are done in thermo-regulated stainless steel vats. Bottling is done 12 months after the harvest to keep the maximum amount of fruit freshness. |
