| VINIFICATION |
Traditional vinification in stainless steel and temperature controlled vats. After fermentation the “ micro-bullage ” process is used (light oxygenation in vat) resulting in better colour and aromatic structure.
For the recent vintages (since 2000): 30-35% of the overall production was aged in oak barrels (including new oak barrels) during 6 months. Bottling is done 12 to 15 months following the harvest. |
