| VINIFICATION |
Manually harvested during which the grapes are successively sorted, de-stemmed and passed along a vibrating (sorting) table.
The vinification is done in thermo-regulated vats with capacities of 70 hl to 110 hl. Vatting and maceration processes are adapted to suit the vintage. Traditional methods combined with modern facilities allow us to extract the quintessence of the grapes.
Aged in oak barrels for 16 to 18 months, one-third of the barrels are renewed each year. |
