VINIFICATION Fermentations are done in barrels and aged on less for 18 months. The assemblage is done in December following the harvest. Fined and lightly filtered. 
   
STYLE The white wine is simply awesome ! Rich, amongst the most powerful of the appellation, with all the sufficient fruit and acidity (balance) to insure longevity. One should have at least a few bottles of Chevalier on hand. Ideally requires a minimum of 5-10 years of ageing. 
   
MARKET NOTE Chevalier had an ever-so-slight qualitative dip in the early 90’s. Since, the red is quickly coming back to a level of a 3rd Growth and the white has almost regained it's position in the 1980's as one of Bordeaux's legendary white wines.
