| VINIFICATION |
Manually harvested with sucessive passages during picking. Prior to fermentations, 50% of the grapes are pressed directly and the remaining 50% have a skin-contact maceration. 100% of the juice is fermented in oak barrels (60% of which are new oak barrels).
The ageing is done "sur-lies" with "batonage" on a bi-monthly basis (for the 1st 3-4 months) then on a monthly basis for the remaining 10 months. |
