Very traditional with long fermentation at high temperatures, and in oak vats which are perfectly maintained. The wines see at least 50% new oak during the ageing, which lasts 18-20 months, and are bottled 18 months after the harvest. |

At best, Canon can be an exemplary "plateau" St-Emilion : powerful, tannic, concentrated, extraordinarily rich and profound. Canon can age marvellously. |

| MARKET NOTE |
If Canon had some technically difficulties throughout the 1990’s resulting in the gradual loss of confidence from some in the trade, the estate seems to be slowly getting back on track. |
